In 1912, French chemist Louis-Camille Maillard discovered the maillard reaction that changed the flavor game. High heat meets beef, creating that crave-worthy seared crust. The Oklahoma-style smash burger was first created during the Great Depression, when onions and beef were smashed together on a scorching hot iron griddle.
